Turmeric (Haldi) is the rhizome of a perennial herb with large, oblong leaves, typically growing to a height of 60–100 cm. The plant produces underground rhizomes that are cylindrical to slightly curved, measuring 2–5 cm in length and 1–3 cm in diameter. These rhizomes are orange to yellowish-brown externally, with a vibrant orange-yellow interior. When dried and ground, they form a fine, aromatic yellow powder widely used in culinary, medicinal, and dyeing applications.

Its oleoresin is used in pickles, mayonnaise, beverages, and dairy products, while curcumin serves as a colorant and textile dye. Turmeric is also used in medicinal oils, ointments, cosmetics, and has stomachic, carminative, tonic, antiseptic, and biopesticidal properties.
